Fitzsimmons Brewing Company’s founding is a story of love. After 10 years together, beer-lovers Cody and Pamela were at a crossroads—should they spend their money on a fancy wedding or on their dream of opening a brewery. Now the duo, joined by head brewer Allen Douglas, runs a 10-hectolitre brewing system and crafts new batches of unfiltered, unpasteurized beers several times per week. In addition to offering tours of the brewery, they also host a tap room—a cozy watering hole made rustic with a worn wood bar and a slatted wood ceiling—serving up small snacks that pair nicely with their brews.

Big Hill Blonde: This blond ale gives off a cloudy, golden glow and scores low on the IBU scale, which means its citrus flavor is subtle and unobtrusive. Pairs well with bread, cheese, chicken, and other white meats. (5% ABV)
